Curry…

Originated from India, its now known worldwide and loved by all.

I make curry very often, as it’s one of my favourite comfort food and its so easy… You just need vegetables (depends on the season) a few spices, chicken or lamb if you like it meaty, lemongrass sometimes, lime,  most of the time coconut milk and you can play with it;

This one is a recipe from my friend Leslie who lives in San Francisco. With fish, coconut milk, lime….And its so good !!!

Ingredients, serves 2

-300g of cod
-1/2 onion
-2 garlic cloves
-10g of fresh ginger
-1 small hot red pepper
-1/2 tbsp of red curry paste mild
-1/2 tsp of coriander powder
-150ml of coconut milk
-1/2 tbsp of fish stock
-Juice of 1 lime
-3 tbsp of olive oil
-1 carrot
-2 coriander sprigs
-salt/pepper

Cut the cod in big chuncks and let it marinate covered in the fridge with the lime juice, salt and pepper for 30min.

Meanwhile, peel and grate the ginger, chop the hot pepper, mix the fish stock in 100ml of boiling water.

Peel and chop the onion and garlic finely, cook them in a frying pan with the olive oil, add the curry paste and coriander powder, let it brown slowly for 2min, then add the coconut milk and fish stock.
Season with salt and pepper and add the hot pepper and ginger. Let it simmer for 10min.

Cook 150g of rice.

Then add the fish and the grated carrot on the top and cook for the last 8/10min on medium heat.

When ready sprinkle the fresh coriander on the top.
