As per the continuity of our “apero’ serie here is a Spanish one, the mix of prawns and chorizo AND baked red pepper is just divine, it can be used for aperitif or, if for example you use the skewers only, it could well be a starter with a salad or a main with vegetables or rice or grains…
It’s as simple as ‘hello’ (can we say that in English ? 🙂 )
Ingredients, serves 4
-2 red bell peppers
-Half of a chorizo
-Paprika
-8 prawns, raw
-Salt and pepper
Preheat your oven at 180°C /350°F, place the peppers on a baking tray and bake them for around 20min, till they are soft and the skin starts to grill.
Meanwhile, peel the prawns, take off the skin of the chorizo and slice it.
When the peppers are cooked, let them to chill a bit and take off the skin and seeds.
Blend it to obtain a cream, add a bit of salt and pepper if needed.
Make your skewers with one slice of chorizo, one prawn, one slice of chorizo…put your skewers on a baking tray and bake them for around 10min, don’t overcook the prawns.
When everything is ready, pur the peppers cream in a verrine and place the skewer on the top for a yummy looking appetizer.
