Lemon rice changes the rice 🙂 It’s as simple as making a plate of rice with butter and cheese (French way, or at least my grand mother’s way) and so different, spicy and tasty !!!

Lemon rice is widely used in south India, that’s where I got the recipe, in the Kerala region, it’s as simple as hello and taste so good, lemony, crunchy thanks to the nuts, and the colour is wonderful.

Ingredients, serves 4

-2 cups of basmati rice, cooked
-1/4 tsp of mustard seeds
-10 curry leaves
-50gr of peanuts
-1 onion chopped
-10ml of lemon juice (around 1 lemon)
-1 tsp of turmeric powder
-20ml of coconut oil
-Salt to taste

Heat the oil and add the mustard seeds, then add the peanuts after the mustard seeds pop.
Add the onion, curry leaf then pour the lemon juice, turmeric powder, salt and the rice.
Mix very well and cook for 5 more minutes sprinkling some water for the rice not to get dry.
