That will be a very quick one as I am working in Brignoles, in Provence and have very little time working on the blog this week again, but just to say that this recipe worth to be tried, really, it reminds me of when I was working in a Mexcian restaurant in London (very first experience in a restaurant kitchen) where I made a lot of different ceviche amongst other things.

Sophisticated ceviche because of the high end restaurant, and so so delicious.
Prawns ceviche, octopus ceviche… with orange, lime, red onion just a little bit… it was divine.

This ceviche is a lot more simple but not less delicious,

 

Ingredients, serves 2

-250g of firm white fish like halibut
-Juice of 4 limes
-1/2 red onion sliced into rings
-1/2 handfull of pitted green olives finely chopped
-1-2 green chilies finely chopped
-1-2 tomato seeded and chopped into 2 cm pieces
-Bunch of coriander
-1 tbsp of extra virgin olive oil
-1/2 pinch of caster sugar
-Tortilla chips to serve

Cut the fish in small slices, same for the onion and squeeze the 4 limes on it.

Cover with cling film and leave it in the fridge for at least 1h

Meanwhile chop the olives, tomatoes and coriander.

Remove the onion from the fish (keep a few rings if you want for decoration) and drain to remove the lime juice too.

Add all the ingredients on the fish with a pinch of salt and sugar.

Drizzle with olive oil et c’est tout and you’ll love it I am sure !!!
