It’s been a bit hectic, that’s why I am late on my blogging schedule, but no more excuses, I cooked, still and it’s yummy, really.

I didn’t take the time to make my own puff pastry, not because of the lack of time in London but just because I’ve never made any 🙂 see ? no more excuses….. don’t tell anyone but yes, I’ve never even tried to make my own puff pastry. Voilà !

It’s a quick one today but trust me, the result is really unusual and delicious !

Ingredients, for 4 parcels

-1 roll of puff pastry
-300g of spinach
-200g of feta cheese
-200g of grape seeds
-1/4 of tsp of cinnamon powder
-3 cloves of garlic
-Coriander and parsley leaves
-splash of olive oil
-salt/pepper

Unroll your puff pastry, cut it in 4 pieces and put it in a preheated oven at 180°C for 10min.
Meanwhile, cook your spinach and garlic cloves finely sliced in a pan with olive oil. Let it cook slowly till it reduces and release the excess of water.
The spinach have to be very dry otherwise the dough will get soggy.

When spinach are ready, add salt, pepper, the feta crumbled, and the grape seeds, washed and cut in haf if they are big. Put everything back to the heat for a few second for the water, if there is, evaporate again.

Mix gently, take the dough out of the oven, let it to cool down a bit and put the mix in the middle of each parcels. Fold the edges and put it back in the oven for 20min, till the dough is a bit crispy.
