If there is a dessert that everybody loves is chocolate mousse.

Everywhere I lived, in the UK and the US they are more or less fluffy, more or less light or sweet but everybody knows and loves it.

Mine has 3 ingredients : chocolate, eggs, vanilla sugar, that’s it.
If you want (as I did) you can add a 4 spices mix or any spice you like.

It takes 5min to make and just need to rest at least half an hour in the fridge.

You can be very creative with chocolate mousse and add some meringue pieces, marshmallows, nuts, rose petals or even chili powder for a Mexican touch….

Ingredients, for 4

-3 eggs
-100g of dark chocolate
-10g of vanilla sugar
-Mix of 4 spices (optional)

Melt your chocolate, meanwhile separate the yolks and whites, mix the yolks with sugar, when the mix is light and fluffly add the melted chocolate to it (let the chocolate to rest for a few minutes before adding it).

Whisk your whites very firm and incorporate gently the chocolate.

Pour into bowls, cups or ramekins and let it set in the fridge for at least 30min.
