It’s a very Spanish-Basque country kind of a dish that I very often made for my clients this summer without being able to eat it and I was jealous 🙂 Yes I am sometimes jealous of my clients 🙂
As much as I love what I do, I’d like, sometimes to sit down and enjoy the meal that I prepared for them 🙂

So I made this one just for myself this time 🙂 and I so enjoyed it 🙂

This dish is so easy, so comfy and so delicious, that that would be a crime not to try it 🙂

Ingredients, serves 2

-1 big white fish filet like cod
– 600ml of tomato coulis
– 500g of white beans
– 1 cup of black olives pitted
– Half of a white onion
– 1 red bell pepper
– 1/2 strong chorizo sliced
– Salt and pepper

Slice the onion, red bell pepper and black olives.
Put the white beans and tomato coulis on a baking tray, add salt and pepper, add the chorizo, pepper, onion and olive and mix.
Put salt and pepper on both sides of the fish, place the fish on the top and put in the oven at 180°C for 30/45min.
