The joy of summer is that food wise or fruits and vegetables wise it’s beautiful and simple, the products we have in the south of France are so amazing, especially if you buy local and organic, that there is no need to add anything.

Apricots are , to me, rarely sweet, unless again you buy really good quality like the ‘orangered’ breed that is not necessarily  more expensive but pinky-orange-freckled, juicy and sweet…

When you have that, you just add a little bit of honey, rosemary sprigs and pine nuts and c’est tout, and put them in a preheated oven at 180°C till they start to shrink and your kitchen smells paradise.

Baked apricots, serves 4 people,

-8 apricots
-1 tbsp of golden raisins
-1 tbsp of pine nuts
-1 tsp of blossom flower
-Rosemary sprigs

Stuff your apricots with the mix and put in the oven for around 15min.
