As I am going to the south of France very soon I already feel on holiday. I’m not going to be on holiday the whole time but it feels like it.
I tend to forget that I am not always on holiday but that’s the way it should be, no ? Feeling on holiday even if you’re working.

I don’t know if it’s normal or not but that’s the way I feel. I am the kind of person who loves Mondays.

So to start my holidays in advance, I made those chickpeas croquettes. It really takes 5 min to make and it’s filling, delicious and healthy.

Chickpeas croquettes, serves 4

  • 1 small can of chickpeas
  • 2 tbsp of bread crumbs
  • 1 egg
  • 1tsp of cumin
  • 1 tsp of smoked paprika
  • 1 spring onion
  •  1 pinch of chopped parsley
  • Salt, pepper
  • Vegetable oil

Method :

Mash the chickpeas with a fork, and add salt, pepper, bread crumbs, cumin, paprika, spring onion and egg.

Mix well and shape your croquettes the way you like.

Heat the vegetable oil in a pan, when hot, fry the croquettes a few minutes on each sides, till they are golden brown.

For an even healthier version, you can heat them in the oven, 180°C/375°F for 15 min.

To pair with a salad and/or a yogourt sauce.
