During the Christmas period, we just want to drink mulled wine with a piece of cake….but not any kind of cake…. I would say a cake with a lot of spices… and honey… why not…

When talking about spices and honey, just one comes to my mind… ginger bread ….

The not too sweet, soft and golden one….

I’ve always found ginger bread very dry and so, impossible to keep for a few days unless you want to choke.

Actually, not this one. Not this beautiful, healthy and yummy and soft and tasty one.

I hope that your Christmas was really Merry and I am sure that you’re going to like this ginger bread.

Ingredients :

-250g of honey
-250g of flour
-100g of sugar
-10g of baking powder
-1 tea spoon of fennel seeds
-1 tea spoon of grounded nutmeg
-1 tea spoon of cinnamon powder
-1 tea spoon of ginger powder
-2 eggs
-10cl of milk

For the icing :

-125g of cream cheese
-Icing sugar to your taste

 

Heat the honey in a pan or microwave for 2 min to make it runny.

In a bowl pour the flour, baking powder, sugar and spices. Add the honey. Mix and add the eggs one by one, then the milk.

Whisk. Preheat the oven at 160°C / 320°F.

Place a leaf of baking parchment in a baking loaf tin, pour the mix and put it in the oven for around 45min till it’s golden-brown, still soft in the middle and that your kitchen has a soooo Christmassy smell.

Let it to cool down and prepare your icing by mixing the cream cheese with icing sugar. The amount of sugar depends on how you like it, more or less sweet. Whisk and taste regularly. add some more sugar if needed. It depends on the cream cheese you buy, the icing will be more or less runny. This one was runny, that allowed me to cover my cake by pouring the icing on the top.
I don’t remember the brand of this cream cheese but when I once used some Philadelphia, the icing was far more dense so I spread the icing with a spoon which gave another look to my cake.
