I’ve always loved coleslaw since I arrived in London 12 years ago.

The origin is a cabbage salad that’s been improved over the years made not even with mayonnaise but just a simple vinaigrette dressing.

Different countries are making their own but the main ingredient remains cabbage.

In Russia they add some apples, cranberries, in the US it’s often with vinegar and ketchup.

Grated carrots, grains, sometimes raisins and/or chicken…..mayonnaise or salad cream

It’s delicious but can be a bit heavy so I’ve tried a new recipe making the sauce with yogurt, orange juice instead… and it was a success !!!

 

Ingredients, serves 4.

– 1/2 white cabbage
– 4 carrots (2 orange, 2 purple)
– 3 spring onions
– 3 Orange juice
– 6 tbsp of plain yogurt
– 2 tsp of oil (vegetable, grape seed, rape seeds…)
–  2 tsp apple cider vinegar
– 1 tsp of dijon mustard
– Salt and pepper

Peel and grate the carrots, slice finely the cabbage, make your sauce by mixing the rest of the ingredients and add your sauce to the vegetables.

Cut the spring onions finely, add it to your sauce, keep the green part to add a bit of colour on the top.
