I am back from a trip to India…

It was wonderful, sunny, hot and sticky, spicy, very kind and spiritual… I loved it !

We’ll have to make different Indian dishes soon together but don’t worry I’ll give you the proportions, ingredients etc…. as I met some people kind enough to give me all their recipes tips and secrets 🙂

For now, the plum season has started so this is something I had never done before and it turned out to be sooo yummy !!!

 

Ingredients, for 1 big baking tin or 2 smaller

-500g of damson plums
-175g of butter
-175g of dark muscovado sugar
-140g maple syrup
-2 eggs beaten
-200ml of milk
-300g self raising flour
-1/2 tbsp of baking powder
-1 tbsp of ginger powder

Preheat your oven at 180°C.

In a bowl, mix the butter melted, the muscovado and maple syrup.

Let it to cool down for 10min then stir in the eggs, then the milk and flour, baking powder and ginger. Mix well.

Put a bit of butter on a baking tray, line up some baking parchment on the top, the butter will help to hold the paper stuck on the mould.  Then butter the baking paper, wash and halve the plum and put them cut side down on your tray and pour your mix on the top.

Let it to bake for 30/45min, depends on the size of your tray as always. My mould is 20x20cm so this mix allowed me to bake 2 trays of 20×20 for 30min of cooking.
